Jet Tila’s Drunken Noodles
Sauce
2 tablespoons sweet soy sauce
1 tablespoon oyster sauce
1 1/2 tablespoons fish sauce
1 tablespoon sugar
1 teaspoon Sriracha (Or other hot sauce as per preference)
1 teaspoon minced garlic
6 to 8 Thai basil leaves, cut chiffonade
Noodles
3 tablespoons canola or peanut oil
2 to 3 cloves garlic, minced
2 large eggs
1 to 2 serrano chiles, thinly sliced
6 to 8 large shrimp, peeled and deveined
1/2 medium white onion, sliced
4 cups Jolly noodles
Jolly seasoning from noodles packet
1 cup Thai basil leaves, loosely packed
1/2 cup grape tomatoes, halved

To make the sauce, combine all the ingredients in a small bowl and whisk.

In a large pan, heat oil and then add garlic. Cook until light brown. Add eggs, noodles seasoning mix, serrano chillies and cook until eggs are lightly scrambled.

Add shrimp and onion and fold constantly until the shrimp turn pink, about 1 minute.

Add the noodles, basil, tomatoes and sauce and toss for about 3 minutes.

Cook for additional 1 minute until noodles are coated well in the mixture. Serve warm.
