Grandma’s Cajun Chicken & Spaghetti
1 box of Jolly pasta (spaghetti)
1 broiler/fryer chicken (3 to 4 pounds), cut up
1 to 1-1/2 teaspoons cayenne pepper
3/4 teaspoon salt
3 tablespoons canola oil
1 package (14 ounces) smoked sausage, sliced
1 large sweet onion, chopped
1 medium green pepper, chopped
1 celery rib, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained

Season Chicken with cayenne and salt. Heat oil over medium-high heat and brown the chicken in batches. Set aside once done.

Add sausage, onion, green pepper and celery. Cook and stir over medium heat. Add garlic and cook a minute more.

Stir the tomatoes in. Then, return chicken to the pan and bring to boil. Reduce heat and simmer until chicken juices are clear.

Cook spaghetti by boiling 6 cups of water in a pot with the spaghetti and salt.

Remove Chicken from pan and remove the meat from the bones when it’s cool enough. Shred meat with 2 forks and bring to boil in the pan.

Reduce heat and simmer for 8-10 minutes covered. Drain and the spaghetti and serve warm with the chicken mixture
