Efik Coconut Rice (Dooney’s Kitchen Restaurant)
Goat Meat
Chopped onions
Jolly Spice mix – quantity will be based on your tolerance for heat
2 – 3 cans of Coconut milk – depending on how much rice you are cooking with
2 – 3 cups of Jolly Rice
1 cooking spoon of crayfish
1 small cup of smoked red prawns
1 handful of flaked smoked fish
Salt
Stock cubes – optional
Chopped spring onions for colour – optional
Chopped chilli also for colour – optional

Rinse meat and set aside. Add water to pot and season with salt, stock cube, chopped onions and Jolly spice mix.

Rinse the starch out of rice till the water is clear and add rice to stock. Add 2 cans of coconut milk. Place on heat and add crayfish, prawns and fish.

Taste the pot mixture and adjust seasoning if needed. Add spring onions and chilli. Allow rice to cook until dry.

Taste it to make sure and then add the remaining can of coconut milk and stir.

Cover the pot with foil around the edges tightly and allow the rice to cook. Can let it burn a little for a smokey flavor and a caramelization of the coconut milk.

Add the goat meat back into the pot and let it steam with the rice.

Serve warm.
