 2 packs of Jolly Noodles
 Jolly Seasoning mix (from noodles packets)
 3 eggs
 Green/yellow/red bell peppers (Your choice)
 Plantains
 Your choice of protein (Chicken, beef, ham, tofu for vegetarians)

Wash, chop and dice all your toppings before building the omelet to avoid sogginess because of the speed of this dish.

Fry the plantains until golden brown.

Boil Noodles but don’t cook through. Only until soft to lay them out. Drain out the water and transfer the noodles into a well-oiled pan after. Sprinkle seasoning mix as appropriate.

Beat the eggs in a bowl, seasoned with salt and pepper. Pour the egg mixture on top of noodles with the toppings.

Cook on medium heat for 8-10 minutes until toppings are nice and crispy.

Serve warm and enjoy.

NOTE: Can also put the pan in the oven to cook through after adding the eggs and remaining toppings to the noodles.
